It’s been a few years since I’ve been in Montreal. And I’ll tell you…there’s nothing better than Montreal in the summertime. The people are beautiful, the weather is lovely, the shopping is to die for, and the food is magnifique!
I wouldn’t be doing this great city justice without speaking about the food. Oh, the glorious food! Yesterday, for lunch, I polished off a decadent brie & cornichons sandwich. For dinner, we went to Weinsteins & Gavino’s for happy hour (4 wines later…) and had a delicious filet mignon. But today, oh today, I had crepes. Savory crepes filled with smoked turkey and cheese, followed by sweet crepes stuffed full of chocolaty goodness.
I can honestly say that I love crepes. I make them at home, but not enough – unfortunately, they’re usually saved for a special occasion. In any case, I thought I’d share my no-fail recipe with you. Please remember, that it’s actually best if you leave the batter in your fridge for 1 day before frying.
INGREDIENTS
1 cup all-purpose flour
1 teaspoon white sugar
1/4 teaspoon salt
3 eggs
2 cups milk
2 tablespoons butter, melted
DIRECTIONS
Sift flour, sugar and salt. In a separate large bowl, beat eggs and milk together with an electric mixer. Beat in flour mixture until smooth; stir in melted butter.
Heat a lightly oiled frying pan over medium-high heat. Pour the batter onto the pan, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Brown on both sides and serve hot. Fill with anything you like!
